Princess Mononoke, hands down. Since it wasn't clarified between Anime series and Anime movie productions, I have to put this in.
FWIW, Cowboy Bebop remains my favorite series.

None that I'm aware of. I'd have honorably mentioned Paranoia Agent, but the ending became a bit too obvious for such a good show.

Sorry, but Tsubasa Chronicle's anime art made me cry. D8 The manga however, is excellent. Though I'm beyond confused right now with the plotline and the time traveling. XDD
Oooh, Ophi, you got me hooked on Mushishi. Oooh, I forgot about that. Such a GREAT anime. =D

I would have to say FMA, just because unlike most other anime, they actually ended it. And the story and creativity was awesome, in my opinion.
